MACADAMIA NUT BRITTLE

MACADAMIA NUT BRITTLE

INGREDIENTS

  • 1 cup of halved or roughly chopped macadamia nuts
  • 1 cup coconut sugar
  • ⅓ cup water
  • 2 tablespoons unsalted butter

METHOD

  1. Preheat the oven to 180 degrees
  2. Place the macadamia nuts on a baking tray lined with baking paper
  3. Roast for 6-8 minutes or until golden brown
  4. Cut the butter into cubes and keep ready next to the stove
  5. In a heavy pan, combine the sugar and water and bring to the boil, start to stir when the sugar starts to caramelise
  6. Wait for the caramel to turn into a brown, amber colour and then remove the pan from the heat
  7. Quickly stir in the cubes of butter you set aside earlier, one by one, until they are completely dissolved
  8. Immediately pour the hot caramel over the macadamia nuts on the prepared lined tray
  9. Let the brittle cool completely at room temperature and then break into your desired sized pieces or cut with a knife for a more even look
