SPICED ROASTED MACADAMIA NUTS
INGREDIENTS
- 1 tablespoon olive oil
- 2 cups raw unsalted macadamia nuts
- 1 heaped tablespoon coconut sugar
- 1 teaspoon of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili powder
- 1 teaspoon good quality salt
- ½ teaspoon cayenne pepper
METHOD
- Preheat the oven to 250 degrees and line an oven tray with baking paper
- Place the oil and nuts in a medium-sized bowl and toss until well coated
- Add the remaining ingredients and mix well to coat evenly
- Transfer the nuts to the prepared tray and arrange in a single layer
- Bake for 25 to 30 minutes until lightly browned, stirring occasionally
- Remove from the oven, immediately loosen the nuts with a spatula, and set aside to cool before serving
